The reason for the shape of the water molecule is because of the oxygen atom has two lone pairs of electrons. These (lone pair-lone pair) take up more space due to the fact that  they repel each other greater than bonding pair or bonding pair-lone pair does. The result is a distorted tetrahedral arrangement in which the H—O—H angle is 104.5° rather than 109.5 degrees. The oxygen atom has larger atomic mass (than the Hydrogens) and hence attracts more of the molecule's electron cloud to its end. This makes the oxygen  partially negative in polarity (negative dipole) compared to the Hydrogens that take the positive dipole.
