When high-energy radiation in the form of neutrons, alpha, beta, gamma, and x-rays are released into the environment, they can disrupt the normal sequence of the DNA which bears the information about an organism.  Reactive oxygen species are generated that oxidize proteins and cause mutations in the DNA.

The same thing applies to the DNA of plants and this can cause redundancy in their growth. This results in genetic defects. Cancer, which is the abnormal outgrowth of the cell also arises because of the cell damage caused by radiation.
