The mass of the potato chips would change due to the movement of water in/out of the cells of the potato by osmosis.

Osmosis refers to the movement of water molecules from the region of high water potential to the region of low water potential through semi-permeable membranes.

Regions of high water potentials have low solute concentrations while regions of low water potentials have high solute concentration.

Potato chips placed in sugar solutions whose concentrations are more than that of the sap of the potato cells will lose water to the surrounding solution. Hence, they will shrink and lose weight with time.

On the other hand, potato chips placed in sugar solutions whose concentrations are less than that of the sap of the potato cells will gain water from the surrounding solution. They will become turgid and increase in weight with time.
