Because the days when the thief tells the truth, Monday, Wednesday and Friday are not consecutive, he cannot say "I will tell the truth tomorrow" on those days without lying.

He cannot say the same thing on Sunday, Tuesday or Thursday because that will be true and he must lie on those days.

So the only day left in the week when the thief can say this is Saturday :)
