Glycemic Index is a measurement associated with observing the effect of carbohydrate on an individual's blood glucose (or blood sugar). Specifically the index is utilized when there is a rise in an individual's blood sugar after 2 hours of consuming food. Due to the expected high level of blood sugar, GI can also be used to assess Insulin response to store the excess blood glucose from the blood into body cells to organs such as the Liver. Ultimately, blood glucose are stored in the liver as glycogen, a form of energy reservoir.
